Abstract: การศึกษาปัจจัยที่มีอิทธิพลต่อความตั้งใจซื้ออาหารเพื่อสุขภาพของผู้บริโภคในเขตกรุงเทพมหานครเนื่องจากแนวโน้มอาหารเพื่อสุขภาพเป็นหนึ่งในเทรนด์อาหารโลกและยังคงมีการเติบโตเพิ่มขึ้น จึงจุดมุ่งหมายเพื่อทราบถึงพฤติกรรมผู้บริโภคที่ส่งผลต่อความตั้งใจซื้ออาหารเพื่อสุขภาพ โดยทำการแจกแบบสอบถามในเขต กรุงเทพมหานคร จำนวน 400 คน จากกลุ่มตัวอย่างดังกล่าวพบว่าส่วนใหญ่เป็นเพศชายที่ใส่ใจในการเลือกอาหารเพื่อสุขภาพโดยมีช่วงอายุระหว่าง 21 – 30 ปี วุฒิการศึกษาอยู่ในระดับปริญญาตรี ปัจจัยแรกที่ผู้ตอบแบบสอบถามส่วนใหญ่นึกถึงเป็นอันดับแรก คือ การเลือกอาหารเพื่อสุขภาพเพื่อประโยชน์ด้านสุขภาพและผู้บริโภคคิดว่าสาเหตุที่ทำให้ผู้คนทั่วไปไม่ค่อยให้ความสำคัญอาหารเพื่อสุขภาพคือ ราคาที่สูงกว่าอาหารทั่วไป ทั้งนี้ ผู้บริโภคที่ซื้ออาหารเพื่อสุขภาพมักมีค่าใช้จ่ายเฉลี่ยต่อเดือนอยู่ที่ ต่ำกว่า 3,000 บาท จากการวิเคราะห์โดยใช้การทดสอบสัมประสิทธิ์ของเพียร์สัน (Pearson’s Correlation Coefficient) และการวิเคราะห์ถดถอยเชิงพหุ (Multiple Regression)พบว่าผลงานวิจัยนี้ยืนยันความถูกต้องของทฤษฎีพฤติกรรมตามแผนของAjzen(1991) ซึ่งกล่าวไว้ว่าปัจจัยด้านทัศนคติ การรับรู้ความสามารถการควบคุมพฤติกรรม และปัจจัยด้านการคล้อยตามกลุ่มอ้างอิง มีผลต่อความตั้งใจซื้ออาหารเพื่อสุขภาพ งานวิจัยครั้งนี้ยังพบอีกว่าปัจจัยด้านการรับรู้ความยุ่งยากและความกังวลสุขภาพก็มีอิทธิพลต่อความตั้งใจซื้ออาหารเพื่อสุขภาพเช่นกัน
This study aims to examine factors that affect customer’s purchase intention for healthy food in Bangkok area. Due to an increasing trend of healthy food, it is important to understand consumer‘s behavioral intention when purchasing healthy food. A survey method was used to investigate how consumer’s behavior effects purchase intention. A random sample of 400 respondents was selected in Bangkok area. The results found that most of the respondents who intended to purchase healthy food were males, between ages of 21-30 years old and graduated with in bachelor degrees. The most significant factor that the respondents consider when buying healthy food is its health benefits. However, the reason that most consumers do not buy healthy food is because of higher price compared to an ordinary food. Generally, consumers’ average expenses for healthy food is approximately 3,000 baht per month. According to analyses of Pearson’s Correlation Coefficient and Multiple Regression, it was found that this research confirms the Theory of Planned Behavior (Ajzen, 1991) which explains that customer’s intention to purchase healthy food is affected by attitude, perceive behavioral control, and subjective norms. This study also found that perceived difficulty and health concerns also affect customer’s intention to purchase healthy food.
